— Rancher’s Beef Supper —
INGREDIENTS:
2 lb Lean Ground Beef
1 cup Onion; Chopped, 1 Large
1 cup Cracked Wheat; Uncooked
2 cups Tomato; Fresh, Chopped, 2 Medium
2 cups Water
3 tablespoons Parsley; Snipped
2 teaspoons Beef Bouillon; Instant
1 1/2 teaspoons Salt
1/2 teaspoon Oregano Leaves
1/4 teaspoon Minced Garlic; Instant
1/4 teaspoon Pepper
1/2 cup Parmesan Cheese; Grated
DIRECTIONS:
Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat. Stir in the remaining ingredients except the grated Parmesan Cheese. Heat to boiling then reduce the heat and simmer, covered, stirring occasionally, until the wheat is tender, about 30 minutes. (A small amount of water can be added if necessary.) Stir in the cheese and garnish with additional snipped parsley and/or Parmesan Cheese.
— Texas T-Bone with Wild Mushrooms and Tomatoes —
INGREDIENTS:
4 t-bone steaks,1 1/2″ thick – 16oz each
salt and freshly ground pepper – to taste
2 tablespoons butter
1 teaspoon fresh thyme leaves
2 cloves garlic – minced
1 pound fresh wild mushrooms – sliced
(chanterelle, morel, oyster)
1/4 cup cabernet sauvignon – (dry red wine)
grilled tomato halves
grilled red onion slices
fresh thyme sprigs for garnish – (optional)
DIRECTIONS:
Prepare a direct-heat fire in a charcoal grill and oil the grill rack. When coals are ready, rub the steaks on both sides with salt and pepper to taste. Place on the grill and cook, turning once, 6 to 8 minutes on each side for medium-rare.
Meanwhile, in a saute pan over medium-high heat, melt the butter. Add the thyme and garlic and saute until softened, 2 to 4 minutes. Stir in the mushrooms and saute until softened, 2 to 4 minutes. Pour in the wine and bring to a boil, then remove from the heat.
Transfer the steaks to individual plates and spoon the mushrooms evenly over the top. Garnish with the tomatoes, onions and herb sprigs and serve immediately.
— Farm Style Stuffed Minute Steaks —
INGREDIENTS:
10 minute steaks
1 – 8oz. can beef broth
1 package of seasoned stuffing (Pepperidge Farms)
1/3 cup Parkay margarine
1 jar beef gravy
DIRECTIONS:
In a saucepan, melt margarine and add the beef broth. Add the stuffing and fluff with a fork until the liquid is soaked up. In a separate pan, fry the minute steaks (DO NOT break into small pieces)–fry to the doneness you like, then drain them on paper towels. Put some stuffing on one end of each minute steak, then roll the minute steak up toward the other end. Place stuffed steaks in a baking dish sprayed with Pam. Pour the beef gravy over the top. Bake at 350 degrees for 10-15 minutes or until hot. fry remaining two eggs.
— Cowboy Supper —
INGREDIENTS:
4 medium potatoes
1 onion, sliced in rings
1 lb hamburger
1 (16 ounce) can baked beans
1 (10 3/4 ounce) can tomato soup
6 slices cooked bacon, diced
6 slices cooked bacon, diced
DIRECTIONS:
Brown and drain hamburger.
Slice potatoes in 2 qt casserole.
Put onion rings on top of potatoes.
Cover with hamburger, followed by beans.
Spread soup on top.
Bake, covered at 350 for 1 and 1/2 hours.
Uncover, sprinkle bacon bits and cheese on top.
Bake another 10 minutes.
— Ranch Stew —
INGREDIENTS:
1 tablespoon butter or margarine
1 lb ground beef
1 large onion, chopped
1/4 cup chopped celery
1/4 cup chopped green bell peppers
2 garlic cloves, pressed
1/2 teaspoon sugar
3-4 carrots, sliced
1 (14 ounce) can diced tomatoes
1 (16 ounce) can whole kernel corn
1 (32 ounce) can ranch style beans
6 medium potatoes, peeled and diced
3 – 4 cups water
DIRECTIONS:
Brown meat in skillet.
Transfer to a large stockpot and add remaining ingredients.
Add salt & pepper, to taste.
Cook until potatoes and carrots are done.
